August Favourites

Well this is a hard one! I’m going to choose two because I’ve been away and whilst I was in Spain my favourite ingredient had to be tuna! From tuna steak to raw to tuna can! I love tuna! Or tunny as it said on many menus.. I do love the translations! Anyway tuna, I think it’s probably my all time favourite fish! I’ve always loved it sushi style but have recently loved a good tuna steak with mediteranian flavouring! So satisfying, flavoursome and just brill! I’ve also loved it seared in a salad or as part of a tapas dish and out of a can or should I say jar (that’s how it comes in Spain) so chunky and great on the end of a pintxos with an olive, pickled pepper and anchovies. And on top of a simple but amazing beef tomato and onion salad with a whole lot of olive oil!

My second ingredient I’ve just been loving is almond butter! You guys know I love nut butters to the moon and back five times but recently that love has gotten, if possible, stronger! My favourite combination has to be with carrots dipped in but I also love it on top of porridge, yogurt, avocados, in stir frys and as of today, smoothie bowls! I’m addicted and I’m not ashamed!!

Recipe

Hmmmm! I’m going to say my layered coconut and chocolate hazelnut and raspberry chia pots. One, because they are so flavoursome, creamy, comforting and all round delicious as well as being oooober healthy and two, they look super pretty and when you have got that layering off to a T it’s incredibly satisfying and you feel like an all round boss, excited for the morning so that you can eat it and well.. then it just sets you up for the day because your Instagram in the morning is going to be on point and yeah! Thats all I’m saying..

Food

This would have to be kale chips! I must admit I’ve steered away from the kale for some time now and I’m yet to use it in my recipes but as of this month I’ve become the biggest kale chip lover! I particularly love Inspirals BBQ, Wasabi and Chocolate flavours! Sounds weird I know but believe me it works! I have made my way through about 15 bags in the space of three weeks! Super nutritious, incredibly flavoursome and so so so addictive. I’m going to have to order the bigger bags because the smaller size doesn’t satisfy my cravings and they are just so tasty! I think my favourite is probably BBQ as I like bit of spice but then it’s closely followed by the chocolate, it sounds so strange I know but it’s really good and it sort of tastes like chocolate biscuits!

Snack

Well I would say kale but I’ve used that so as I’ve mentioned earlier I’m loving carrots dipped in nut butter. It’s got that whole satay thing going on and again, very addicitve. I chop my carrots into little buttons and then flood a little bowl with my nut butter of choice and get dipping! I’ve gone for carrot instead of fruit as it’s lower in sugar and therefore better for the gut. My favourite nut butter to dip carrots in will have to be almond and hazelnut, both by Meridian! Get dipping!!

Nut butter

I only tried this two days ago but it was just so tasty and healthy I have to share! Its sweet virtues chocolate nut butter! it contains roasted almonds, coconut, coconut oil, raw cacao powder, coconut blossom, chia seeds, sea salt and ginseng! It’s basically healthy and rich chocolate spread that’s good for you and super nutty and delicious and incredible on top of yoghurt!!

Fitness

As of yesterday my favourite new exercise is oddly a back exercise even though its my least favourite muscle group to train, but anyway seated cable rows with the rope pull. Now they kill but a good kind of burn and you really really feel them the next day!

Fashion

My love for baggy trousers has grown. When I say baggy I mean cigarette/straight leg/peg trousers. Quite classy with a nice top or casual with a T shirt. My favourites are these, these and these.

Restaurant

Australasia. I think I spoke about this restaurant in either my May or June review but honestly, this time it was one of the best meals I’ve ever had in my whole entire life! It was on my birthday, so rather fitting really! I had black tiger prawns, black chunky cod fish with the most amazing sweet sauce, a truly beautiful and incredible smoked salmon salad and the most delicious sea bass ever with a cucumber salsa! The video footage is on my youtube for those who want to see just how beautifully presented everything was and how delicious it all looked! So fresh, truly incredible and it always feels really special in there too! I highly recommend.

Discovery

You’ll hear more about my journey and everything when my new “about” section goes up but I’ve recently been researching a lot into how mental and physical wellbeing come as a pair. if one’s off it’s most likely the other is too. Think about when you’re nervous and you feel sick or when you feel unwell you feel super sensitive or grumpy too. I want to talk about this more on both my blog and all my social medias as I think it’s quite unknown and I also want to share how mental health is just as important as physical health and how what you eat can have an affect on your mental wellbeing.

Instagram

Green kitchen never fail to amaze me. Their holiday and travel photos, family and food are incredible. I often flick through their Instagram feed as it’s just so beautiful and inspirational. Their food styling is on point and they also create some incredibly delicious recipes! They are just so down to earth and lovely too! Such a positive and gorgeous feed to follow!

TV

The Bake Off! It’s back on! I may be a health blogger but that doesn’t stop me watching the Bake Off and loving all things foodie! I already have my favourites! Such a good and easy watch. Really motivational and inspirational too. I’ve decided every Wedneday I’m going to bake something so me and my family can sit and eat it whilst we watch because last week I got right hungry watching them bake cakes! Luckily I had some of my Livias Kitchen orange millionaire bites left! (also really good)

Event

Obviously my birthday and my holiday but in particular a certain day of my holiday!

We all decided to attend the San Sebastian food school in the Hotel Maria Christina. We went on the pintxos course which is the basque countries version of tapas. It started at 10.30am and finished at 4pm. Probably up there with my favourite day since Good Roots! That and my birthday of course! So I was a little nervous to begin with but then I felt so confident and comfortable getting stuck in and talking to everyone. I felt in my element talking to other foodies and people who shared the same interests as me. It was really nice to be around like minded people again! We also made some really incredible food, both taste and presentation wise (yes, I bought quite a few new props) and I learnt loads of new and traditional techniques which I can’t wait to try out again! Another reason why I loved it so much was that they catered for my intolerances – grains, gluten, prawns and I said red meat as at the minute I’m finding it really hard to digest but once my stomach is back on track I’m going to reintroduce it slowly! Winter won’t be the same if there’s no rich and meaty stews! Anyway I wasn’t looked at strange, I didn’t feel a pain or strange in any way and it wasn’t just me for once! There were four others with intolerances too! I actually felt quite special as the chef himself was making special dishes just for me and showing me cool gadgets and various ways of cooking! We had quite a few courses and everything was explained so well! Plus everyone was involved! We all made a classic pintxo to start ( the tuna and anchovy one i mentioned earlier) and then I had a celeriac cream with lemon infused vegetables and a poached egg cooked in its shell at 65 degrees for 20 minutes which was then cracked over my dish and the egg came out poached!! Incredible!! Then I had pan fried scallops with fava beans and chimichuri sauce, followed by anchovies in a mustard and mango sauce. Then to finish we had homemade goats milk dessert with homemade walnut butter and honey!! So so so so good! Such an amazing and enjoyable experience where I throughly enjoyed my self, learnt so much, built my confidence and ate some incredible food! And made new friends!!

Speaking of new friends! My favourite blog of the month is from someone I met at the food school who is also a health and wellbeing blogger, recipe creator and interested in gut health! Fodder and Plonk. I’m yet to try any of her recipes but I’ve fallen in love with the website design, style of writing and food styling and photography! There are also some really positive and informative posts about mental wellbeing and health in general which I also love! Go check it out and subscribe!
