Good morning my lovely lot! So this weekend I spent Saturday ‘researching’ or looking round healthy foodie shops around Sheffield/delis/grocers etc. to see where my chocolates would fit in! I also got my hands on some Coyo vanilla and nutmeg ice cream which I can’t wait to try! Then I bought some things for the exciting events I’m planning annnnnnd I have now listed my new summer chocolate boxes!!! So my next season chocolate boxes are now available! Theres a raw lemon drizzle bite, a raw berry baobab bomb, a choc chip cookie dough, a cardamom and orange truffle, a salted caramel bite bar and a peanut and maca fudge!!! Super excited to see what you all think and to hear which are your favourites!!! So Sunday I went on the usual Sunday stroll with my Momma in the sun and had a lovely picnic! Then I went to my Dads for tea and then home for the usual dessert (Yogurt and protein whip, berries, choc nut butter, almond butter, granola and nibs) and to watch Harry Potter! Sunday rituals! Oh and if you’re following me on Instagram you’ll know that my Camera broke on Saturday! So Monday I went to Chesterfield to get it fixed and it won’t be back home for another few weeks!! So my phone will have to do for now! Then I had a lovely catch up with an old friend before heading home after lunch and working like a maniac until 9pm! Busy busy! Lot’s of exciting stuff coming your way and I can’t wait to reveal it all! Then yesterday I took half a day off to go shopping in Leeds with my Momma for our Holiday and out for an incredible lunch! Then back home for a busy afternoon of work and another late night! The rest of the week I’m getting on with my exciting projects and planning everything for Friday and also doing a lot of baking for Friday! I’ll be doing a stall at Nuffield in Sheffield on Napier street from 9am until 1pm selling my chocolate boxes, cookbooks, peanut butter and lots of raw treats! Super excited!!! Can’t wait to see some of you there!
So today I’m sharing one of my many granola recipes after a lovely request off of Instagram. My Mum and I go through so much granola! Last week I made an incredible mixed nut and coconut and this week I’ve made a scrumptious banana and walnut! This one reminds me of banana bread! Perfect with yoghurt and fruit and even more amazing sprinkled over smoothie bowls and porridge for a nice contrast in texture and a lovely nutty flavour. Ummmummm! Let me know how you eat yours!!
90g jumbo rolled oats
100g porridge rolled oats
60g quinoa flakes
200g walnut pieces
2 tbsp white chia seeds – black will do just fine
160g mashed ripe banana – about 2 large bananas
45g coconut oil
40g maple syrup
1 tsp vanilla extract
0.25 tsp salt
50g crunchy peanut butter
Preheat the oven to Gas mark 4.
Pour the first set of ingredients into a baking tray.
Mash together the second set of ingredients until combined and smooth.
Pour the wet into the dry and mix well.
Pop in the oven for 45 minutes – stiring every 10 until golden and crisp.
Remove from the oven and leave to cool before pouring into a jar.
Keeps for a couple of weeks.
