Blueberry Peanut Butter Smoothie Bowl

Morning! Good news! My shop is days away from being up and running! Then you can have all the chocolates you want!! Is it acceptable if I say they’re INCREDIBLE!!! I’m not big headed, proud is the word haha! But seriously, they are delicious! I think my favourite is the pecan pie but that changes everyday depending on which one I’m making and testing..

So today I’m sharing another smoothie bowl as well… I love smoothie bowls! I think they’re one of my favourite breakfast recipes, along with eggs. Can’t go wrong with either! (obviously not together!) Both are so versatile and incredibly satisfying. Today’s smoothie bowl is a mix of blueberry and peanut – my take on the peanut butter jelly combination! I think blueberry works better.. I’ve also added a little flax in their for a dose of omega 3 and it adds extra depth. I’ve used JustBee Blueberry iced tea in this as it sweetens and makes it silky as well as enhancing the flavour of the blueberries. I love these drinks on their own too. I think last week I had one everyday.. they taste just like the sugar filled ice tea we all know and love yet healthy! I’m telling you, theres an alternative for everythinggggg nowadays! I’ve alssoooo used a scoop of natural peanut protein powder from a brand called Motion. I got given a few samples the other weekend at the befit event and I’m seriously loving it. I mixed it with banana and of course Manilife the other day to create an ‘angel delight’ like dessert and it was incredible! Topped with granola and raspberries. Ummmummm! In the smoothie it adds to the whole peanut vibe and adds a good dose of natural protein too. The smoothie is then topped with all my favourite things for lots of texture and indulgence and of course, deliciousness.

Ingredients – serves one

100g frozen banana

100g frozen blueberries

80ml nut milk or Justbe blueberry water

2 tbsp deep roast peanut butter – Manilife (I’m a stockist so send me an email if you’d like to buy some)

1 scoop of peanut protein powder (motion) /unflavoured – optional

1 tsp ground flaxseeds

1 tbsp deep peanut butter – Manilife – original will be delicious too

1 heaped spoonful of vanilla coconut yoghurt

a handful of buckwheat granola or you’re favourite plain/nutty/berry granola

12 blueberries

1 piece of raw chocolate, finely chopped

a pinch of blueberry powder

Method

Blend the first set of ingredients in a high speed blender until silky smooth and thick like ice cream.

Scoop into a bowl and smooth over with the back of a spoon.

Dollop with the peanut butter and coconut yoghurt.

Scatter over the granola and blueberries.

Sprinkle with raw chocolate and blueberry powder.

Dig in!
