Coconut Miso and Cardamom Porridge

At first glance this may seem so so odd, but honestly its a match made in heaven, sweet and comforting miso with sweet coconut and aromatic cardamom. Delicious. Don’t knock it until you try it.

Ingredients – serves one

Porridge –

50g rolled porridge oats

200ml oat milk

1 tsp brown rice miso

1 tbsp coconut milk powder

0.25 tsp cardamom

Apple –

1 tsp butter

1 apple, diced

Toppings –

2 tbsp full fat live/coconut yoghurt

1 tbsp roasted hazelnuts, chopped

1 tsp coconut nut butter

1 tsp almond butter

1 piece of chocolate, chopped

Method

Fry the apples in the butter in a small pan until golden and then pop to one side.

Pour the porridge ingredients into the pan and stir over a low heat utnil thickened.

Pour into a bowl.

Dollop the yoghurt and nut butters on one side and scatter the apples on the other.

Sprinkle the nuts and chocolate down the middle.
