2 slices of sweet potato bread – easier to digest
A handful of strawberries
1 tbsp pumpkin seeds
1-2 tsp balsamic vinegar
Optional add ons-
A handful of rocket
First lets prepare everything.
Half the avocado and scoop the flesh into a mug. Mash the avocado with the back of a fork until soft. Put to one side.
Slice the strawberries. You want to slice enough to cover the two slices – around 6/7. Put to one side.
Toast the seeds in a pan over a dry heat until golden. Put to one side.
If using – Prepare the rocket by washing and chop or crumble up the feta into small pieces.
Now lets assemble.
Toast the rye to your liking – Golden is perfect!
Spread the avocado onto both slices as evenly as possible.
Arrange the sliced strawberries on top of the avocado before sprinkling over the seeds.
Finally drizzle with balsamic.
Top with rocket and feta if using.
