I new this was going to be good. Modest I know.. I new it was going to be good due to my love for snacking on avocados filled with yogurt, nut butter and berries! So I already new the flavours all worked well together and thats why I new this would work. Not big headed, just logical..
Anyway lets talk parfaits! Who doesn’t love a good parfait, they look pretty and are so interesting and fun to eat! Each layer is different in both texture and taste and all the colours look really pretty through the glass! I’ve gone for fruit, nuts and yogurt! Simple yet so delicious and a little weird as I’ve used avocado but believe me it works! If you have tried nut butter and berries in avocado you’ll already know that it works but if not believe me, it does! It just adds colour, makes it more satisfying and it adds a nice creaminess and coolness next to the nutty salty butter and tart berries! So good!
The almond butter works really well with the peach and raspberries and well it works well on pretty much everything really but especially in this! I love how it runs through all the layers and makes everything almondy and extra delicious! Definitly my favourite layer/favoruite ingredient ever! Almonds are also packed full of nutrients and high in healthy fats, fibre and protein! They are also loaded with antioxidants (as are the berries) which help protect against oxidative stress which in english means protects us against raging and diseases such as cancer. This is all concentrated mainly in the skin of the almond so blanched and flaked won’t have the same effect health benefit wise. As they are low in sugar and high in healthy fats, protein and fibre they are a great nut for diabetics and they are also high in magnesium which helps control and maintain sugar levels! Another benefit for type 2 diabetics! They are also probably my favourite nut ever in all forms and especially toasted!! So why wouldn’t I use them?!
Ive also added coconut because you know.. who doesn’t love coconut?!
So heres a parfait of all my favourite things and i hope you lot love it just as much as me!
Lets get cooking!!
Ingredients – Serves one
4 heaped tbsp of full fat natural live yogurt – I used The Collective
1/2 a ripe avocado
1/2 a flat peach, sliced
4 big raspberries, halved
2 heaped tbsp smooth almond butter
a small handful of raw coconut flakes
1 frozen raspberry
a pinch of hemp seeds
Start by mashing the avocado with a fork in a small bowl until smooth.
Grab yourself a jar or bowl and have all the ingredients prepared to start layering.
Start with the fresh raspberries, followed by half the yogurt and half the avocado.
Then layer ontop half of the peach slices and coconut.
Drizzle over 1 heaped tsp of almond butter and then pour over the remaining yogurt and mashed avocado.
Arrange the remaining peach slices and coconut.
Drizzle over 1 more heaped tsp of almond butter and then crush the raspberry and sprinkle that over the top to make it look pretty too.
Oh and some hemp for extra prettiness too!
