Hey guys! I’m back in the country! Spain was amazing and I’m already feeling those holiday blues! The food was fabulous, the weather was fabulous and it was nice to get away and chill out! I’m so glad I wrote all my blog posts and filmed everything before I left so I didn’t have to stress whilst I was away! Now lets talk salad!
This is the ultimate summer salad! Full of vitamin and mineral rich veggies! The perfect salad to come back of holiday too and to feel truly nourished again! Rich in healthy fats and all things cheesy and delicious! I kept the choice of cheese open as any of your favourite cheeses will do! I went for brie but feta or a blue or anything strong would be super delicious too! Or if you are lactose intolerant try a goats and if you are vegan replace the cheese with toasted and slated pumpkin and sunflower seeds! Anything you choose will be delicious so don’t worry!
This is probably the simplest recipe I’ve ever share with you guys! You literally chop everything up, as neatly or as roughly as you like, mix it all together with a spoon or hands.. which ever excites you more! Divide it between four bowls and get stuck in! Or take it to work/school/on a picnic/to a BBQ etc!
Ingredients – Serves 4 as a light lunch
1 romain lettuce, chopped
1 cucumber, sliced and quartered
2 spring onions, sliced
2 avocados, diced
1 handful of parsley, chopped
1 large fennel, diced
4 tbsp olive oil
1 lemon, juiced
salt and pepper
100g unpasteurised strong cheese such as brie/feta/goats/blue – I used waitrose own chaource AOP – strength 2, cubed
It couldn’t be simpler!
Place everything into a large bowl and mix until everything is combined.
Divide between four bowls and get stuck in!!
