Morning my lovely lot. What a wonderful long weekend I’ve had. Thursday I had my hair done for the first time since may and then I met my boyfriend and Dad and we went out for a meal and cocktails to celebrate my Dads birthday. Friday was a slow start, I challenged Rob in the gym haha, got the odd life chore done and then my friends and mums friends started arriving as we were having everyone round for food and drinks as we were appearing on Jamie Olivers and Jimmy’s friday night feast! Such a good night! Then Saturday we chilled all day, finished booking our holiday and then Rob went off to the Wednesday match, me and mum cleared up and then settled down for a night infront of the TV. Sunday I took one of my favourites out for breakfast to celebrate her birthday and then I spent the rest of the day working and thennnnn that evening I went out again with my Dad to celebrate his birthday, just us two. Monday was back to LeitchyCreates business! I’ve got five super exciting meetings this week, restocking my website to do and new flavours to develop!
So today I’m sharing a recipe I made over Christmas. Malty maca porridge with sweet grilled apple, creamy yoghurt, granola for a spiced nutty crunch, a little choc because why not and pomegranate and maple for colour and sweetness.
Ingredients – serves one
50g rolled porridge oats
a pinch of salt
200ml oat milk
1 tsp maca
slice into thin sticks
2 tbsp full fat live yoghurt/coconut yoghurt
1 tbsp spiced granola/muesli
2 tsp pomegranate
1 tsp maple syrup
2 chocolate covered hazelnuts, chopped
2 pinches of cranberry powder
Preheat the grill to high and line with foil.
Pop the apple sticks on the ined grill and grill until they turn golden at the edges.
Meanwhile, pour the porridge ingredients into a small pan and stir over a low heat until thickened.
Pour into a bowl.
Dollop the yoghurt on one side of the bowl and arrange the grilled apple alongside.
Scatter over the muesli and pomegranate.
Decorate with the chocolate and cranberry powder.
Drizzle with maple syrup.
