Italian Fry Up


We all love a good fry up! The smell of sizzling bacon and eggs! What better way to wake up?!?!

I’ve created a healthy Italian version of the classic breakfast we all know and love, it packs lots of flavour, it’s lighter and it’s satisfying! It also does the fry up trick – it satisfies those cravings, it’s exciting and it’s easy to digest!

Instead of bread I’ve chosen rocket which at first may seem like a bit of a sacrifice but believe me it works! I’ve also swapped bacon for pancetta for those Italian vibes but feel free to use good old full fat bacon if you don’t like those strong smoky flavours. And I’ve made sure I’ve included soft and juicy mushrooms and grilled tomatoes for the whole fry up feel! As well as a good old fried egg, cooked in the juices from the ham for added flavour, and a good old bit of cheese for the Italian influence and well…I love cheese and I’m a little addicted! But it’s ok because 9/10 I’m using unpasteurised or raw and its all natural and an amazing source of calcium as well as the best flavour booster!

I came up with this delicious creation the morning before I flew off to Spain! I must have been feeling those mediteranean vibes.. Or a big coincidence but hey, it worked so I’m not complaining!

Speaking of my holiday! I loved it and I’m feeling very chilled and inspired after two weeks of rest! I also came up with a ton of new recipes, re-wrote my ‘about’ section of my blog and I’ve bought back lots of new ingredients I can’t wait to try! So keep your eyes peeled for lots of new creations!

With that said, let’s get cooking!

Ingredients – Serves one

2 handfuls of rocket

2 slices of pancetta

1 large tomato, halved

6 mushrooms of choice, sliced

Small hand of basil, chopped

1 tsp ghee

2 eggs

2 tsp balsamic vinegar

20g parmesan, grated


Preheat the oven to a low temperature. This is going to keep all the ingredients warm until you are ready to serve.

Preheat the grill to high and line with foil.

Place the rocket on a plate.

Place the tomato on the lined grill and grill until golden, keeping  a close eye, you don’t want it to burn. Once it’s ready pop on a plate/tray and then put it in the preheated oven to keep warm.

In a large frying pan heat the ghee over a medium to high heat. Once melted add the mushrooms and fry until golden and smelling incredible, season and stir through the basil then pour into a bowl and pop in the oven to keep warm.

In the same pan fry the pancetta on both sides until golden and crisp. Transfer to the tray with the tomato on and pop back in the oven.

Last but not least, fry the two eggs in the same pan with the ham juices, add more oil if needed. Fry the eggs to your liking, I like mine runny but this depends on preference.

Once the eggs are cooked, slide them onto the plate with the rocket and all the prepared ingredients from the oven.

Drizzle with balsamic and scatter over the parmesan to finish!
