Lamb, Pea and Feta Wraps

Morning guys!! Heres a new little favourite of my Families that I whipped up for my birthday eve meal last week! Tender juicy lamb, crumbly feta and pea and mint puree are a winning combination!

Ingredients – serves three

Wraps –

70g chickpea flour

115g spelt flour

salt and pepper

water

Olive oil to fry

Puree –

150g defrosted peas

1 large avocado – 170g flesh weight

10g mint leaves

half a lemon, juiced

salt and pepper

Lamb –

350g lamb neck fillet, cubed

2 garlic cloves, sliced

a good pinch of salt and pepper

Toppings –

2 spring onions, slices

85g feta, crumbled

Method

Wraps –

Mix the flour together with water until a pancake like batter has formed.

Pop a pan over a medium heat and drizzle with olive oil.

Ladel a third of the batter into the pan and spread as thin as possible, leave to cook for 5 minutes before flipping and cooking unitl golden. Pop on a plate and repeat.

Puree –

Meanwhile, blend the puree ingredients in a food processor until smooth.

​Lamb – 

Once youve cooked all the wraps, add the lamb ingredients to the pan and cook for 5 – 8 minutes or until golden but still tender.

​Serving –

Place a wrap on each plate and spread with the puree. Top with the cooked lamb and garlic , crumbled feta and spring onions.
