Hellooo! I hope you are all feeling refreshed and happy and full on alllllllllll the food after christmas and new years! I certainly am! I had a much needed 2 week break. I just spent my time eating and seeing family and friends! Just lush! But I’m happy and grateful to be back in a routine, as much as I love it, I was starting to feel very bloated, sluggish and tired and ucky haha! So I’m glad to be back into my routine of eating right, exercising and back into the world of chocolate as I’ve got to develop lots of new ranges, all in time for valentines day!
So today I’m sharing a good old, leftover christmas bits and bobs recipe! Cranberry sauce is always a winner in my house but I made absolutely loads this year so I’ve been shoving it in pretty much everything! One being this lush cranberry and apple spiced porridge topped with creamy yoghurt (can be replaced for coconut), buttery pecans and of course, chocolate as it is still that time of year and because I cant go a day without!

Ingredients – serves one
1 apple, diced
2 tbsp cranberry sauce
50g rolled porridge oats
200ml oat milk
a pinch of salt
0.25 tsp cinnamon
0.25 tsp ginger
a pinch of nutmeg
1 tsp maple syrup
2 tbsp full fat live yoghurt
1 tbsp toasted pecans, chopped
1 piece of dark chocolate, chopped
Pop the compote ingredients into a small pan over a medium heat and fry until soft.
Pour half into a small bowl to top the porridge with later and keep the other half in the pan.
Pour the porridge ingredients into the pan with the compote and stir over a low heat until thickened.
Pour into a bowl.
Pour the remaining apple mix over one side of the porridge bowl and dollop the yoghurt on the other.
Scatter the nuts and chocolate down the middle of the bowl.
