Hello! Today I’ve decided to share something light and fresh! Super easy, pretty quick and the perfect al fresco dish!
Courgetti is a weird one! It acts as spaghetti, a replacement for pasta, and it’s a pretty way to eat courgette and make your salads look incredible! It’s great when you are looking for something lighter, free from grains and gluten, and you won’t get bloated as it’s not starchy! I tend to use it when I’m cooking with protein or starchy vegetables and want to food combine properly, or in the summer when I’m making salads! Also it’s quite hard and expensive to buy free from grain pasta, so this is a great cheap and quick alternative that tastes just as good!
Courgettes are also really good for you! The combination of fibre, vitamin C and beta carotene help regulate blood sugar levels. They are also a good source of magnesium that has been proven to reduce the risk of a heart attack and stroke. Try both yellow and green courgettes! Yellow are actually higher in antioxidants and look prettier too!
Make sure you mix the lemon and olive oil with the courgette well, as it softens it up and flavours the courgette.
Try swapping the broccoli for asparagus for a change and feta for goats cheese as its easier to find unpasteurised/raw goats cheese! It will be just as delicious!
Ingredients – Serves two
400g tenderstem broccoli, quartered
3 spring onions, sliced
handful of mint, chopped
1 lemon zest and juice
2 tbsp olive oil
200g feta cheese, cubed
Start by spiralizing the courgettes. Cut off the top and bottom and spiral each one. Place the courgetti in a large bowl.
If you don’t have a spiralizer, use a vegetable peeler to create courgette ribbons, then you can cut them into smaller strips or leave them papadelle style.
Add the lemon zest, juice, onions, mint and oil to the courgetti and mix well with your hands.
Place the broccoli and peas in a pan and cover with water. Boil for 10 minutes/until softened. Drain and pour into the courgetti bowl. Mix well with your hands until everything is combined.
Add the feta cheese and mix again.
Once everything is evenly distributed, divide between two bowls.
