Masala Chai Porridge with Grilled Plums

Morning guys! I’ve had a wonderful long weekend! Let me fill you in!

Saturday Morning I headed down to London on a 11am train with my pack up to go (a smoked salmon and pea and mint puree sandwich! Posh I know) I arrived and went straight to meet my old best friend who moved down to London when we were 16. We spent the day chatting and shopping. Lovely lovely. Then I went to go and meet Celine (@Blueberrysmiles22) at ethos for tea! We met at Ethos as I have never been before but I’ve heard good things! The food was so lovely but I mean £18.99 for a buffet was pretty ridiculous and that was for one plate of food… and just vegetables. Hmmmm kind of put me off going back but I enjoyed the food whilst I was there but obviously didn’t opt for a drink or pudding after I got the price for my main course! We then wondered back to Celines, nattered and chilled before getting an early night. Sunday we woke bright and early, Celine made me a delicious smoothie bowl and then we walked to the station to meet the girls so that we could catch a train to sunny Brighton! There was six of us, me, Celine, Gemma, Amy, Leila and Catrina! I can’t explain how grateful I am to have these ladies in my life. We had SUCH a lovely day wondering the streets of Brighton. For lunch we went to another healthy buffet style place which was actually nicer and £7 all you can eat!! Very impressed! We then wondered around and went for lattes and raw cakes! Delicious! All of us picked up bits and bobs for tea on the train! I went for a Happy Maki roll, the avocado kiss which was rice, avocado, cucumber, sundries tomatoes, soy sauce, sesame and basil! Sounds so odd but honestly it was incredible! Me and Celine then took a long stroll back to hers, nattered and then another early night as I had an early train to catch in the morning. Monday we squeezed in breakfast before I set off! I got to try Deliciously Ellas new bircher topped with raspberries and peanut butter which was delicious! Then Celine took me to the tube station so I could set off home! My Dad picked me off from the station to drop me home, we had lunch and then I chilled, caught up on emails, admin and cleaned my room and just took it easy as I’m still feeling a little under the weather and It was my birthday eve! Monday evening, my Dad came round for my birthday cake! My Mum made me a delicious Lemon, blueberry and poppy seed cake from the gorgeous Green Kitchen Stories blog! I was so grateful to have a cake as I’ve not had one in years!! So thank you Mum! Yesterday was my birthday! I am now 20!!! I got some beautiful gifts from my family and Celine! Lots of recipe books, a pasta machine, some day books, drawing equipment, a gorgeous bowl and money! Celine got me such a thoughtful and beautiful gift! A personalised engraved spoon which says ‘Jordans spoonful of goodness’ so beautiful, unique, thoughtful and all round amazing! Thank you!! We then headed to Tamper coffee in Sheffield for a gorgeous breakfast with my Mum and Brother (I had the usual). Then we walked down to the station to catch a train to Leeds to meet my Auntie for lunch and shopping! Perfect! After we’d nattered, shopped out and eaten all we could manage, we hopped on the train back to Sheffield, to refresh, change and to go and meet my Dad for tea at Carluccios! Another gorgeous meal! A foodie has got to eat out all three meals on their birthday!!! We said our goodbyes and then me, my Mum and my Brother headed back home to watch a TV and eat more cake! What a weekend, what a birthday and I couldn’t be more grateful for my friendship group, this community and my wonderful loving family!!

Today I’m sharing a porridge recipe inspired by an ice cream I had on holiday which was masala chai flavoured! The Ice cream was topped with pineapple and blueberries but I think grilled plums work better, with the almonds, butter and nibs for crunch!

Ingredients – serves one

Porridge –

25g rolled porridge oats

25g rolled jumbo oats

0.12 tsp each of –

cinnamon

ground cardamom

fennel seeds

ground ginger

a pinch of salt and pepper

a pinch of ground cloves

0.5 tsp vanilla extract

1 tbsp coconut milk powder

200ml oat milk

Toppings –

1 small plum, halved

1 heaped tsp full fat live yoghurt

0.5 tbsp almond butter

5 roasted almonds, chopped

1 tsp cacao nibs

Method

Pop the grill onto high and line with foil.

Pop the plum halves on the lined grill and grill until golden.

Meanwhile, pour the porridge ingredients into a pan and stir over a low heat until thickened.

Pour the porridge into a bowl.

Top with the almond butter and yoghurt.

Arrange the plum halves on top.

Scatter over the almonds and nibs.
