Nothing beats a quick and easy egg lunch! Spiced peppers, a good old runny fried egg, creamy avocado, cooling full fat yoghurt and my favourite herb, coriander! Super simple and super mouth watering and delicious! Such a fridge clearer as well! Cheap and easy! Good eh? and super nutritious! All peppers support good circulation! Red in particular have higher levels of capsaicin found inside the white seedy membrane in the middle of the pepper which is anti-inflammatory and anti ageing! Beautifying as well as oooober delicious!! High in vitamin c and b which is also great for healthy hair and firming up the skin! (Does that mean no bingo wings in later life?!) Super antioxidant, super vibrant and super delicious both raw and cooked! To make this dish super anti inflammatory I’ve paired them with garlic and because I’m a garlicholic and put it in everything! I won’t go into too much detail about garlic benefits as I went into a lot of detail a few posts back but seen as we seem to be talking about beautifying benefits in this post.. garlic has been proven to reduce acne and skin sensitivity! Have I persuaded you to make this delicious and beautifying dish yet? Avocado also helps clear up skin! As its hight in vitamin e which is a powerful antioxidant that keeps cells strong and hydrated and vitamin b which is detoxifying and reduces redness and inflammation in skin cells. So yeah i think thats enough beauty benefits for one post! I could go into all the antioxidant properties of the spices but i think I’ve probably persuaded you enough by now!
If you are lactose intolerant feel free to leave out the yogurt and add more avocado or make a quick tomato and red onion salsa to go along side!
Eggs are a great source of protein and omega 3 as well as vitamins and minerals and dietary cholesterol! They are also great at keeping you full! Make sure you use room temperature eggs to get that beautiful runny yolk!
Ingredients – Serves two
1.5 tsp ghee
2 small/medium bell peppers, cubed
2 garlic cloves, diced
0.5 tsp cumin seeds
0.25 tsp ground coriander
0.25 tsp ground cumin
a pinch of chilli powder
a handful of chopped coriander
0.5 lemon, juiced
4 heaped tsp of full fat live yoghurt
salt and pepper
In a small pan, heat 1 tsp of ghee over a medium heat, add the peppers, garlic and spices and fry for two minutes. Turn the heat to low and leave to cook until soft, stirring occasionally.
Meanwhile, mash the avocado in a small bowl with a fork until smooth, add the lemon and season well. stir to combine.
Heat the remaining ghee in a frying pan over a medium heat. Once melted, add the eggs and fry to preference. I like mine runny and my Dad doesn’t so this will vary! Around 5-7 minutes!
Place the fried eggs and spiced peppers on two plates.
Dollop on the mashed avocado and yoghurt.
Season well and scatter over the coriander.
For an extra add on, try grated unpasteurised cheddar cheese!!
