Nutty Maca Porridge

Maca! Maca finds itself in the ‘Superfood’ group for a very good reason! Maca comes in a powder form and a little goes a long way! It’s quite sweet and malty in taste and very strong! It’s an unusual but enjoyable taste! Maca finds itself in the superfood group because its an adaptogen, which means it responds to everybodies’ individual needs. It’s packed full of vitamin E and is rich in minerals and iron! It helps restore red blood cells and has been proven to speed up and aid muscle healing and repair! So it’s ideal post workout! It is also great pre workout as it also increases stamina and energy! Such an amazing little powder! It balances out mood hormones too so I like to make a spiced malty maca almond milk before bed to relax! However in this recipe, I’m shoving it in porridge! To help your body restore itself in anyway it needs and to energise your morning routine!

This porridge is made using buckwheat flakes which are actually wheat free despite the name and a great source of magnesium and flavonoids which help vitamin C absorption into the body and act as a great antioxidant! Just make sure you buy 100% buckwheat flakes if you are looking for a wheat alternative! If you can’t find buckwheat flakes, oats and quinoa flakes work well too!

I’ve topped this super nutritional porridge with creamy full fat yogurt – full fat is easier to digest as it’s naturally lower in lactose, sugar free and as natural as it comes! I’d also try and get live yogurt as it helps pop healthy bacteria into your stomach! Helping your gut stay healthy! If you are dairy free, use coconut yogurt! It’s just as delicious, just make sure it’s not full of sugar and flavourings and only use one heaped tsp as it’s stronger in taste! Unless you like it that way, use more! I’ve also dolloped on a blob of almond butter as I’m obsessed with all nut butters and it’s adding healthy fats and some protein! Juicy blue blueberries and pistachios purely for decoration and taste but blueberries are a great antioxidant, great for memory and super delicious! Pistachios are gorgeous, taste great and a great source of plant protein and healthy fats! I’ve also sprinkled omega 3 flax on top of the porridge too and a little bit of hemp because it looks pretty but seeing as we are talking a lot about health benefits in this post, it’s an amazing and natural source of protein! As well as this porridge being a nutritional bowl of goodness, it’s also super tasty! So if I haven’t persuaded you with nutritional facts, hopefully I’ve persuaded you with photos and by reassuring you it’s yummy!

Ingredients – serves one

1/2 cup buckwheat flakes – quinoa flakes and oats will also be yummy

1 cup almond milk

1 tsp maca powder

1 tbsp maple syrup

4 heaped tsp full fat live yogurt – feel free to use coconut yogurt for a dairy free alternative

2 heaped tsp of almond butter

20 blueberries

a small handful of pistachios, chopped

a sprinkle of milled flaxseeds

a sprinkle of hemp seeds

Method

Place the flakes, milk and maca in a small pan over a low heat until thickened.

Stir through the maple syrup and pour into a bowl.

Top with a dollop of yogurt and almond butter.

Scatter over the blueberries and chopped nuts.

Sprinkle with flax and hemp to finish.
