Morning guys! Hope you’ve all had a lovely weekend and start to your week! Friday night my boyfriend cam round to watch the football, I made fajitas and we ate chocolate. Saturday was a slow start and then we spent the whole day finding and booking holidays! Blimey thats a painful task! Then that evening we went out for pizza with his family and then I went to his to finish off holiday booking! Sunday we finished everything and then I headed back home to meet my Dad to go to the cinema. Monday was a busy day as I had two exciting stockist meetings, one in Helmsley and one York. I’ll be finding out more soon! Then I was back home, making chocolate and emailing! Tuesday I was a packing up a big order all morning, running to the post office, sending samples, meeting with the accountant and then dropping off more samples, sorting out my accounts and then getting admin done! And today is a recipe developing and admin day as I need to start developing the flavours for the May LeitchyCreates range!
Busy busy busy!!!
So today I’m sharing a recipe I made for my friend last week. Zesty maca and honey porridge topped with orange, nut butter, yoghurt, my own chocolate, granola, pomegranate and red berry powder! Delicious by both mine and my friends standards!
Ingredients – serves one
50g rolled porridge oats
200ml oat milk
a pinch of salt
2 tsp maca
1 tsp honey
0.25 orange zested
1 orange, peeled and sliced
2 tbsp full fat live yoghurt
1 tbsp chai butter – click here for the recipe
1 tbsp granola – I used cinnamon
0.5 tbsp pomegranate
1 piece of dark chocolate, chopped
2 pinches of berry powder (blackberry or cranberry) – optional
Pour the porridge ingredients into a small pan and stir over a low heat until thickened.
Pour into a bowl.
Arrange the orange slices on one side of the bowl and dollop the yoghurt and nut butter on the other.
Scatter the granola, pomegrante and chocolate down the center of the bowl.
Decorate with two pinches of berry powder.
