Roasted Rhubarb and Strawberry Porridge

Morning! It’s May! This year is flying!

I hope you all enjoyed yet another long weekend! They seem to be falling all over the place at the moment. Not complaining!

On Saturday I headed to Befit London, which is a fitness festival with the odd foodie bit too. I got the 7.30am train to London and got to the event about 10.30am after getting on the wrong tube but I got there eventually. After queuing in the longest que in the world.. to be fair, it was constantly moving! So not too bad! I was finally in! I headed straight to the reebok shop as I saw they were putting peoples initials on sports bras and I fancied one! But I tried on a few bits and wasn’t overly impressed so I gained some self control and left (this control was thrown out the window as soon as I got to the food market. I headed straight to Oppo to see the lovely JustBee lady, Hannah and to try the amazing ice cream after hearing so many good things. OH MY I wasn’t disappointed. I got to try a little of the salted caramel and a little of the new chocolate before choosing the chocolate, because I mean… chocolate! They were both so creamy and tasted like the real deal! I’ve decided I’m going to treat myself to a tub very week! I got a mini tub to eat whilst I walked round, topped with almond butter and choc shot! THE DREAM! After nattering with Hannah, I then had a wonder round the stalls! I got a lovely sample of Caulirice which I’m going to be trying later this week with a curry I’ve got planned! I went for the Indian spiced one but there was also a Mediterranean version on offer which looked delicious too! If I like it, I know my local waitrose stocks it! I then headed straight for Rhythm 108 (review) to stock up on lemon biscuits and chocolate biscuits! Aka the best healthy biscuits in the world. I tried a whole lot of protein shakes from a ton of brands, I mean a TON! I already buy Missfits so I decided to give Neat nutrition a whirl as their chocolate one tastes like cookies and its all completely natural and just how I like it! I also got some lovely peanut protein samples from the people at Motion. I then moved onto to see the wonderful people at Linwoods. I think Linwoods were probably one of the first healthy products I bought years ago. I stocked up on their new snack packs after falling in love the other week at the Blogger event. Ummmummm! Especially the chilli ones! She also gave me some fab little samples! I bought my new favourite leggings from MyProtein! They were an absolute bargain (Leggings are ridiculous nowadays) and they stay up and are super flattering! All ready for my PT course and of course, leg day winners. I also got a free shaker and a bar of mint chocolate with my leggings which my Mum gobbled up! I got another free chocolate lavender bar from Raw Health which I also gave to my Mum as I’m not a big lavender person. Of course, I had to try out alllllllll the nut butter brands! My favourite one there was Mindful Bites, I got some squeeze travel packs as I couldn’t decide on my favourite flavour as they were all so creamy! (Plus nothing comes close to ManiLife… sorry not sorry) Anyway, I went for the cacao nutty one, the almond and maca and berry and hazelnut! I’ll be sure to mention them in my upcoming breakfast posts. I picked up a free sample of some chia seeds from the Chia co. Drink wise, I got a free cloudy lemon Zeo drink as that was who the event was sponsored by. I also got a pack of drinks from the amazing people as My Beauty and Go. The apple and artichoke juice is out of this world (I bought three…) I also bought the tropical one and a pomegranate one. They’re all amazing for your skin and incredibly delicious and refreshing. (sipping one as I type!) I wish I stocked up on some Heck sausages but at the same time.. I don’t know how they’d be after a sweaty train trip! So maybe not haha! There were loads of amazing brands and I wish I had more time to look round!! I could’ve easily spent the three days there! Thank you BeTribe (you need to try the ‘feel boss’ blend) so much for being so lovely and sending me a ticket! It was the best day and just what I needed to chill and boost my confidence. So thank you! A part from the food hall, there was also loads of amazing talks and classes. I briefly saw the lovely Madeline Shaw strutting her stuff, cooking recipes from her new book. I went to TwoInfluence talk on business and building a business. Very inspirational and just the kick in the bum I needed to get my chocolate business off the ground and get me excited for my PT course. I wish I saw the lovely Carley Rowena’s talk but I managed to catch the last five minutes and she’s just as amazing in person. I then headed to the GirlGains talk. I LOVE THESE LADIES. Honestly, such inspirations. Such powerful, confident and positive women that just make you feel incredible. They did a talk on body confidence and feeling like a lady boss and being positive and realistic. Just what I needed and I now feel like I can be anything I want to be and won’t let anyone say otherwise. I took so much amazing advice away from that talk which I know I’ll keep referring to and reminding myself of. So Thank you Ladies! I was debating whether to go to their workout or not as I didn’t think I’d have enough time as it took me ages to get there! But after realising and being assured I got the wrong tube, I felt better haha and went for it. One of the best decisions ever! I can’t put into words how amazing and incredible that work out was for my mind and body. I’ve not felt that happy in ages! It was the best workout I’ve ever done in my whole life. It was basically a massive dance party hahah. We’d do a circuit of four resistance/HIIT exercises and then instead of breaking, we’d dance around the room and sing. I couldn’t wipe the smile off of my face. I was more than happy and so grateful to be able to attend these events and take so much away from them. What a day! Bring on Balance Festival. I’ve felt amazing and like a lady boss since! Thank you everyone who made it amazing and thank you to all the lovely ladies I met inside too. We will all have to have a big meet up soon! Then on Sunday we went on a little walk near Bakewell and to fetch some incredible raw milk from the lovely people at Tagg Farm. Seriously the best milk ever. So creamy!!! Super natural too. I got to make my healthy hot chocolate too which was probably the best hot chocolate I’ve ever had, using Well and Happys hot chocolate mix. I snuggled up on the sofa with my raw hot chocolate whilst I watched Harry Potter! The perfect evening! Then Monday, I got up and ready early as My Dad and I were off to Manchester as I need to get kitted out for my course with gym stuff and note pads etc. Also we fancied a day away and to go out for some incredible food. I ended up searching the whole of Manchester for sportswear and found nothing haha! But I did do a kale chip haul in Harvey Knicks, get a new top from urban outfitters and some cool notepads from paper chase. I had an amazing day even if I didn’t get what I initially went for! We started off with lunch at Iberico which is a Spanish tapas restaurant in the Spinningfields area of Manchester. We shared lots of delicious plates. 100% chorizo, manchego cheese, pancetta & leek peas with poached egg, Sereno ham, padron peppers and crispy chicken in a sun dried tomato pepper sauce! DEEEElicous. We then hit the shops and had a cheeky apple juice in Harvey Knicks as it makes me feel posh and It’s actually really really reasonable. Then we sat outside in the Spinningfields again, to listen to some live music in the sun, chill and have a drink before we headed for some Indian Street food. We went to a place called Scene in the Spinningfields again. I picked here as they have a new superfood/healthy section of their menu, as well as traditional dishes my Dad would enjoy. I went for the salmon tikka from the normal menu to start with which was incredible! I never thought of combining spices and salmon but it was amazing! Then for main I went for the superfood menu, butterflied grilled spiced chicken with watermelon and mint salad and quinoa with pomegranates. So SO SO GOOD! Like it didn’t taste healthy or like I was missing out in any way! I wish we had stuff like this in Sheffield! I will definitely be back! They also do healthy vegan options! Then we headed home, I got dropped off at my Mums and we watched Line of duty all evening. Perfect! Then back to normality and revising for my PT course yesterday.

So today I’m sharing a recipe so that you can make the most of the rhubarb and strawberry season. I roasted the strawberries and rhubarb the night before so that everything was ready to be chucked together in 10 minutes in the morning. But if you’re having a lazy day, feel free to do the compote in the morning. The strawberries naturally sweeten the rhubarb so you hardly need to sweeten it. I’ve used quinoa flakes to keep it grain free but feel free to use oats. Paired with creamy coconut cream. Then topped with the red compote, a good dollop of coconut yoghurt for extra creaminess and sweetness, a good dollop of nut butter because I believe every porridge should! Just adds so much flavour and depth. A sprinkle of hemp, coconut and chocolate for little bursts of flavour, texture, variety and tastiness and a little honey to take the edge off of the rhubarb and sweeten the quinoa. Feel free to add more honey to taste or swap it for maple syrup.

Ingredients – serves one with leftover compote for another day

125g rhubarb, cut into 1 inch sticks

175g strawberries, leaves removed

50g quinoa flakes

10g coconut creamed, finely chopped – 1 tbsp of the hard top part on a full fat coconut milk will also work.

200ml cashew milk

a pinch of salt

1 tsp ground flaxseeds

1 heaped tbsp vanilla coconut yoghurt

1 tbsp pistachio/almond butter

1 tsp raw honey

1 tsp hemp seeds

1 piece of raw dark chocolate, finely chopped

a sprinkle of raw coconut flakes

Method

The night before –

Preheat the oven to 210 degrees.

Pop the rhubarb and strawberries in a roasting dish and roast for 35 – 40 minutes – soft and turning charred.

Leave to cool and then pop in the fridge overnight.

In the morning –

Pop the flakes, creamed coconut, milk, salt and flax in a small pan over a low heat and stir until thickened.

Pour into a bowl and top with half the compote – feel free to reheat the compote if you like.

Dollop on the nut butter, yoghurt and honey.

Sprinkle over the seeds, chocolate and coconut flakes.
