Rosemary and Cranberry Cookies

Combining sweet and savoury to make the most interesting, addictive, unusual and comforting cookie ever. One to excite the tastebuds!

Ingredients – makes 20

100g white spelt flour

100g rye flour

100g coconut sugar

1 tsp baking powder

0.5 tsp bicarbonate of soda

0.25 tsp salt

1 tsp dried rosemary

60g dried cranberries

75g melted butter, left to cool

1 egg

1 tbsp water

Method

Preheat the oven to Gas mark 5 and line two trays with parchment.

Mix the first set of ingredients together in a large bowl until combined.

Stir through the egg, water and cooled melted butter and then shape into 20 golf balls with your hand, flatten slightly and pop spaced apart on the lined tray.

Bake for 12 minutes or until golden, remove from the oven and leave to cool and harden slightly.

Then pop on a wire rack to cool fully.

Keep in a sealed box.
