Sausage and Sweet Potato Curry

Morning my loves! A short but sweet post as I’m in London with my girlies!! I’ll fill you in on my few days away on Wednesday!

Today I’m sharing a sausage curry! Like a British and Indian mash up!! Ummmumm a super easy mid week, cold and dark night dish!

Ingredients – serves four

6 97% meat sausges, halved

2 onions, diced

2 celery sticks, sliced

4 garlic cloves, diced

0.5 tsp ground ginger

0.25 tsp mild chilli powder

1 tsp black mustard seeds

2 tsp ground cumin

2 tsp ground coriander

0.5 tsp ground turmeric

a pinch of salt and pepper

400g sweet potato, cubed

240g cabbage, shredded

1 can chopped tomatoes

1.5 can water

1 tbsp tomato puree

a 25g bunch of chopped coriander

Kraut and yoghurt to serve

Method

Pop the sausages in a large pan and fry until golden, add the onions, celery and garlic and cook for 10 minutes to soften.

Stir through the spices, potato, cabbage and tomatoes.

Pour over the water, add the puree and half the coriander, including the stalks.

Bring to the boil and then a medium simmer for 20 – 30 minutes or until the potato is cooked through.

Turn off the heat.

Divide the curry between four dishes, making sure everyone gets three sausage halves.

Scatter over the coriander.

Serve with full fat live yoghurt or coconut yoghurt and kraut.
