Sweetcorn Pancakes with Avocado, Feta and Chilli Jam

Pancakes are my new obsession…. Since pancake day I must of had pancakes every other day, sweet and savoury and everything in-between.

These are one of my favourite creations. Sweetcorn pancakes topped with citrusy avocado mash, tangy feta, sweet yet spicy chilli jam and sumac. Enjoy my lovelies.

Ingredients – serves two

Pancakes –

285g sweetcorn

100g spelt flour

a pinch of salt

1 tsp baking powder

1 egg

90ml almond milk

Toppings –

1 avocado mashed with the juice of 1 lime

60g feta, crumbled

2 tbsp chilli jam

a sprinkle of sumac


Mix the pancake ingredients together in a large bowl.

Place a no stick frying pan over a medium heat.

Drizzle with oil.

Ladel the mix into the pan to create big palm sized circles (should be able to do two at a time) leave for a minute or so to turn golden underneath, flip and cook until golden again and then stack on a plate and repeat. It should make 6 medium pancakes.

Meanwhile, mash the avocado in a bowl until smooth and stir through the lime juice.

Arrange three pancakes on each plate. Top with the mashed avocado and feta. Drizzle over the jam and sprinkle with sumac.
