Turmeric Chai Porridge

Morning guys! I’ve had the most relaxing weekend ever! Saturday I spent the day chilling with my Mum and getting the odd errand done. Then I went off to leeds to meet my friend, watch films and eat Chinese.  we were going to go out but decided to have a chilled evening instead. Sunday  was incredibly chilled, pretty much didn’t move from bed all day other than to eat haha! but it was lovely and just what I needed. Then I headed back to Sheffield to see my Grandma as she isn’t very well. After that we headed back home, got our PJS on, had some comfort food and chilled out by catching up on xfactor haha! Monday was back to recipe developing LeitchyCreates Winter/Christmas range and catching up on Admin and tuesday was pretty much the same.

Today I’m sharing another warming seasonal porridge dish. Inspired by all the golden milk and chai lattes going round at the moment! Feel free to swap the honey for maple or coconut nectar.

Ingredients – serves one

Porridge –

50g rolled porridge oats

200ml oat milk

1 tbsp coconut milk powder

0.12 tsp turmeric

0.12 tsp ginger

0.12 tsp cinnamon

0.12 tsp cardamom

a pinch of salt

a pinch of pepper

a pinch of cloves

1 star anise

0.25 tsp vanilla extract

Toppings –

2 tbsp full fat live/coconut yoghurt

1 tbsp almond butter

1 tsp honey

2 tbsp freeze dried/fresh blackberries

1 piece of dark chocolate, chopped

red berry powder to decorate – optional


Pour the porridge ingredients into a small pan and place over a low heat.

Stir until thickened.

Remove the star anise and pour into a bowl.

Dollop the yoghurt and almond butter on one side of the porridge and the honey alongside.

Scatter the blackberries and chocolate down the middle of the bowl.

Decorate with berry powder if using.
